Simple Grilled Corn Slaw

Grilled corn on the cob always reminds me of grilling, summer and picnics! I still remember the first day I ate a buttered cob at my neighbors picnic. It’s crunchy, sweet and easily modified with your favorite seasoning. I developed this recipe after my sister requested I bring some vegetables to her birthday Barbecue since she already had plenty of meat. This recipe can be made ahead of time and uses readily available fresh ingredients. You can really customize this recipe to your liking, adding or removing ingredients to  tweak the flavors. I love plenty of everything and this really lends itself to lots of little flavors that come together especially after some time marinating in the fridge.

Equipment
Ingredients
  • Corn on the cob, 4 with skin
  • Red Onion, 1 medium, diced
  • Red Pepper, 1 diced
  • Yellow Pepper, 1 diced
  • Fresh Basil, 2 Tablespoons, diced
  • Mayo , 2 Table spoons (My recipe here)
  • Olive Oil, 2 Tablespoons
  • Paprika, 1/2 Teaspoon
  • Lemon Juice, 1/2  of a lemon
  • Salt , 1/2 Teaspoon (to taste)
  • Fresh Black Pepper, 1/2 Teaspoon (to taste)
  • Ancho Chili Powder, 1 teaspoon (Optional)
Directions for the Corn Slaw

Cut of any stems on the corn cobs but leave on the leaves as this will protect the kernels from burning; Moisten the cobs a bit with water;  Grill the corn over red coals or medium gas grill till all sides of the leaves are blackened; Remove the skins; Grill the bare cobs for 2 minutes to add some color to the kernels; Remove the cobs from heat and let cool enough so that you can hold it; Stand the cob on the stem side then use a knife to slice off the kernels slicing from top to bottom on each side; Place all ingredients into a large bowl stir; refrigerate at least 30 minutes to one day; Serve chilled
